Allergen Free Pikelets for Babies

This is a really quick recipe to whip together. I love how the pikelets develop a lovely chewy, almost caramelized coating. Being free from the Top 9 Food Allergens, they are a perfect first food for babies, and a much loved treat for toddlers. They are also free from refined sugar.

These sweet little morsels are perfect for a morning or afternoon snack, served up with jam (check out my recipe eBook for a healthy, sugar free chia jam) and/or cream if dairy is on your menu.
They pass the taste test from my 20 month old and 3 year old, who especially enjoy putting on the jam themselves (and of course making a hell of a mess in the process).
One of the benefits of this recipe is that, because they are so small, you can just about get the whole batch on the fry pan at the same time, meaning little tummies are filled faster.
Allergen Free Pikelets for Babies Recipe
Ingredients
½ cup (1 stick) unsalted butter, room temperature
2 Tbsp chia seeds
4 Tbsp water
1 large banana
30g rice malt syrup
35g rice or coconut milk
½ tsp vanilla essence
50g coconut flour
½ tsp gluten free baking powder
Coconut oil for frying
Method
1. Mix the chia seeds with water in a small bowl and set aside.
2. Mash the banana then add the rice malt syrup, vanilla essence and milk then mix until combined.
3. Add the coconut flour and baking powder and mix in along with the chia seeds.
4. Put a frying pan over medium heat and add a teaspoon of coconut oil.
5. Scoop out about a tablespoon of mix and, using your hands, roll small golf ball sized balls, then lightly flatten before placing on the frying pan.
6. Once they’re golden brown, flip them over to fry the other side.
7. Serve with berry jam and coconut yoghurt.
